  1. Step 1

Spray the ramekins with cooking spray and wipe out most of the oil with a paper towel, leaving a light residue.

  2. Step 2

Pour whole milk into a saucepan and sprinkle powdered gelatin over it.

  3. Step 3

Let the mixture soften for 5 minutes until the surface is wrinkled and gelatin appears wet.

  4. Step 4

Warm the milk over low heat, stirring frequently, without letting it boil.

  5. Step 5

Rub a bit of the milk between your fingers to check smoothness after about 2 minutes.

  6. Step 6

Stir granulated sugar into the milk and continue warming until dissolved.

  7. Step 7

Remove from heat and whisk in cream, vanilla extract, and kosher salt.

  8. Step 8

Divide the mixture among ramekins and refrigerate to chill.

  9. Step 9

Fill a large bowl with warm water, dip a ramekin up to its rim for about 3 seconds.

  10. Step 10

Run a thin knife around the sides, invert the ramekin over a plate, and shake gently to release the panna cotta.

  11. Step 11

Serve immediately or refrigerate, lightly covered, for up to 5 days.
