Chicken Noodle Soup
Ingredients
Serves 4- 3 tbsp Butter
- 1 Carrot diced
- 1 Onion diced
- 2 stalks Celery diced
- 6 cloves Garlic chopped
- 4 Chicken breast skinless
- 2 tbsp Dry jerk spice
- 3 l Chicken stock
- 2 sprigs Thyme
- 2 Bay leaf
- 3 tbsp Parsley chopped
- 1 Scotch bonnet
- Salt to taste
- Pepper to taste
- 2 tbsp Parmesan grated
- 250 g Dried pasta cooked

Method
- Step 1
Season your chicken breast on both sides with dry jerk spice, salt, and pepper.
- Step 2
In a large stainless steel pan, sear off your chicken for 2 minutes per side.

Add the chicken to a large pot.
- Step 4
Fill the pot with chicken stock and place on medium heat.
- Step 5
Once the liquid begins to boil, turn the heat off and allow to cool.
- Step 6
Put a large thick-bottomed pot on medium heat and add the butter.
- Step 7
Sweat off all your vegetables in the butter for 3-4 minutes.

Add your garlic and continue to sweat for another 2-3 minutes.

Add thyme, bay leaves, and scotch bonnet pepper.
- Step 10
Remove chicken breasts from the stock and set aside.
- Step 11
Pour in your stock to the vegetables and bring this to a simmer.

In a separate pot, cook your pasta noodles.
- Step 13
Once the chicken has cooled slightly but is still warm, shred by hand into a large bowl.

Add chicken and pasta into your pot and stir to incorporate.

Taste for seasoning and adjust accordingly with salt and pepper.

Finish with parsley and Parmesan cheese.
