- 1 Plum tomato
- 4 Tomatoes varied
- 1 Shallot banana
- 1 Cornichon
- Salt
- Sherry vinegar
- Olive oil
- Sourdough
- Soft goat cheese
- Herbs for garnish

Start cooking
Tomato
- Step 1
Blanch the plum tomato and varied tomatoes for 20 seconds in rapidly boiling water.
- Step 2
Remove the tomatoes and place them into an ice bath.
- Step 3
Peel the skins from the tomatoes.
- Step 4
Using a spoon, remove the inside of the tomatoes until completely hollow.
Tartare Mix
- Step 1
Finely dice the banana shallot.
- Step 2
Finely dice the tomatoes.
- Step 3
Finely dice the cornichon.
- Step 4
Season the tartare mix with salt, sherry vinegar, and olive oil.
Sourdough Croutons
- Step 1
Thinly slice the sourdough.
- Step 2
Place the sourdough into the oven with olive oil and salt for around 15 minutes until golden brown.
Assembly
- Step 1
Fill the hollowed tomato with the tartare mix.
- Step 2
Place the filled tomato on a bed of goat cheese.
- Step 3
Assemble with the croutons and herbs of your choice.
